Ingredients
- 250g Extra-firm tofu, pressed well and cut into 1-inch cubes
- 4 tbsp Krish's Miso & Ginger Magic Sauce (divided) Magic Sauce
- 1 tbsp Vegetable oil (for grilling/baking)
- 1 Red bell pepper, cut into 1-inch squares
- 1 small Red onion, cut into 1-inch squares
- 1 cup Zucchini or yellow squash, cut into 1-inch pieces
- 8-10 Cherry or grape tomatoes
- 4-6 Wooden or metal skewers
- For serving Fresh cilantro or parsley, chopped
These skewers are my go-to for a quick weeknight dinner or a backyard barbecue. The Miso & Ginger Magic Sauce brings that perfect umami depth that makes tofu sing. Let it marinate — even 15 minutes makes a difference.
Method
Marinate the Tofu
Place the cubed tofu in a bowl. Pour 2 tablespoons of the Miso & Ginger Magic Sauce over the tofu and gently toss to coat. Cover and refrigerate for at least 15 minutes (up to 4 hours for maximum flavour).
Assemble the Skewers
Preheat your grill to medium heat or oven to 200°C (400°F). If using wooden skewers, soak them in water for 30 minutes first. Thread the marinated tofu and vegetables onto the skewers, alternating ingredients.
Cook the Skewers
Brush skewers lightly with vegetable oil. For grilling: cook for 10-12 minutes, turning every 3-4 minutes until charred and heated through. For oven: bake on a lined tray for 12-15 minutes, flipping halfway through.
Glaze & Serve
Remove from heat and brush with the remaining 2 tablespoons of Miso & Ginger Magic Sauce. Garnish with fresh cilantro or parsley and serve immediately while hot.
