Ingredients
- 6-8 Lamb loin chops (approx. 600g total), about 1 inch thick
- ½ jar Krish's Chilli Umami Sauce (divided) Magic Sauce
- 1 tbsp Olive oil or vegetable oil (for pan-frying/grilling)
- To taste Salt and freshly ground black pepper (optional)
- For garnish Fresh mint or coriander, and lime wedge
Lamb and chilli are a match made in heaven. The Chilli Umami sauce brings that perfect kick of heat balanced with deep savoury notes. Let the chops marinate if you can — even 10 minutes makes a difference. And don't skip the rest!
Method
Prepare the Lamb
Pat the lamb chops completely dry with paper towels. Season generously with salt and pepper on both sides. Brush with 2 tablespoons of Chilli Umami Sauce and let sit at room temperature for 10 minutes (or refrigerate up to 1 hour for more flavour).
Cook the Chops
Heat oil in a heavy-bottomed pan (cast iron is ideal) over high heat until shimmering. Or preheat your grill to high. Cook the lamb chops for 3-4 minutes on the first side, then flip and cook another 3-4 minutes for medium-rare. Adjust time based on thickness and desired doneness.
Glaze & Rest
During the last 60 seconds of cooking, brush the remaining 1-2 tablespoons of Chilli Umami Sauce onto both sides, letting it caramelize slightly. Transfer to a cutting board, cover loosely with foil, and rest for 5 minutes — this is crucial for juicy lamb.
Serve
Arrange the glazed lamb chops on a plate. Serve with a fresh cucumber and tomato salad or grilled asparagus to balance the spice. Garnish with fresh mint or coriander and a squeeze of lime.
