  • 6-8 Lamb loin chops (approx. 600g total), about 1 inch thick
  • ½ jar Krish's Chilli Umami Sauce (divided) Magic Sauce
  • 1 tbsp Olive oil or vegetable oil (for pan-frying/grilling)
  • To taste Salt and freshly ground black pepper (optional)
  • For garnish Fresh mint or coriander, and lime wedge

Method

Prepare the Lamb

Pat the lamb chops completely dry with paper towels. Season generously with salt and pepper on both sides. Brush with 2 tablespoons of Chilli Umami Sauce and let sit at room temperature for 10 minutes (or refrigerate up to 1 hour for more flavour).

Cook the Chops

Heat oil in a heavy-bottomed pan (cast iron is ideal) over high heat until shimmering. Or preheat your grill to high. Cook the lamb chops for 3-4 minutes on the first side, then flip and cook another 3-4 minutes for medium-rare. Adjust time based on thickness and desired doneness.

Glaze & Rest

During the last 60 seconds of cooking, brush the remaining 1-2 tablespoons of Chilli Umami Sauce onto both sides, letting it caramelize slightly. Transfer to a cutting board, cover loosely with foil, and rest for 5 minutes — this is crucial for juicy lamb.

Serve

Arrange the glazed lamb chops on a plate. Serve with a fresh cucumber and tomato salad or grilled asparagus to balance the spice. Garnish with fresh mint or coriander and a squeeze of lime.
